Ingredients:
1 cup white flour
3/4 cups whole wheat flour
1/4 cup brown sugar
1/4 cup white sugar
2 teaspoons cinnamon
2 1/2 teaspoons baking powder
3/4 cups chopped rhubarb
3/4 cups sliced strawberries
1 tablespoon orange zest
2 tablespoons freshly squeezed orange juice
1 egg, slightly beaten
1/2 cup milk
1/2 cup plain yogurt
2 tablespoons canola or vegetable oil
Directions:
1. Preheat oven to 350 degrees.
2. Mix all flour, sugar, cinnamon and baking powder together in a large bowl.
3. In a small bowl, combine egg, milk, yogurt and oil; mix.
4. Stir wet ingredients into flour mixture with a fork just until moistened.
5. Fold in rhubarb, strawberries, orange juice and orange zest. Do not over stir.
6. Pour the batter into greased muffin tins and bake 20 to 25 minutes until golden brown. Cool completely.
